The room
Eight tables. One seating a night. We cook what the morning market gives us and pour what the evening asks for.
The fire
Everything passes over coals.
There is no gas line in our kitchen. We light the hearth at four, and by the time the first guest sits, the embers are exactly where we want them. It is slower this way. That is the point.
The cellar
A short list, read aloud.
We keep no wine menu. Tell our maître d' what you are eating and how the night feels, and a bottle will arrive. If you do not love it, we open another. No ceremony, only care.
